Mead

Black Phillip is a Bochet, which is a caramelised honey Mead. Presented in a tall black stoneware crock and decorated to nod to cult folk horror. Black Phillip is a deep, dark brew with a bonfire toffee profile.

Fermented over Moroccan Fig, orange zest and whole Madagascan vanilla pods, we finish over charred bourbon whiskey barrel oak to give a smoky finish. Excellent served from a tumbler at room temperature or warmer.

An Acerglyn is a Mead created using Maple Syrup along with honey in the fermentation process. We fermented our standard raw unpasteurised honey with Maple Syrup, Bay, Indian Assam Tea, and Chai spices (ginger, green cardamom, cinnamon, star anise, fennel, peppercorns and cloves).

The result is a deliciously aromatic mead, amber in colour, light and silky in texture, the sweet woody sap of maple compliments perfectly the combined eastern spices. Deeply mysterious. Bottled in a dark brown glass pharmacy bottle, engraved cork and hand signed, we add a very personal touch to every bottle. A perfect accompaniment to a roaring fire, a good book and great company.

Signature is a Traditional Honey Mead showcasing Welbeck Honey, raw, filtered but unpasteurised for depth of flavour. The bees forage from Hawthorn, Lime Blossom and Sweet Chestnut Blossom on the trees lining the avenues and woodlands of this historic English Stately Home nestled in the ancient Sherwood Forest.

The esters from the honey produce almost sandalwood and definite lime hints. Light golden amber in colour and medium sweet, this brew is the mead from which all of our other brews originated. It is our signature blend. Presented in a tall squared off Apothecary clear glass bottle to showcase tone and clarity.

Summerisle is a Metheglyn, which is a spice based honey Mead. Presented in a Dark Green Pharmacy style bottle and a nod to the folk horror genre. A lemon, bay and cardamom Mead crafted utilising meadow flower honey. More creamy lemon curd and aromatic floral than sour sherbert lemon in profile.

Clear, light, and best served chilled with white meats, salads or fish. Can be served neat or complimented by tonics.

Limited Edition Hawthorn Blossom Mead from Sherwood Forest Nottinghamshire. We only produce one batch of this brew per year due to the scarcity of honey. We have one batch which will be released in 3 stages. Our initial run is now available as we wait for bottles for the next stage. First come first served.

The Morrigan is a Melomel, which is a fruit based honey Mead. Presented in a Tulipano Glass Bottle and crystalline garnet red in colour, this is our homage to the mythical figure called The Morrigan, a shaman who was able to foresee the outcome of war and could transform herself into a flight of ravens.

Full, robust dark cherries, star anise, and a hint of stem ginger for warmth. A beautiful and enigmatic brew. Suits the full range of temperature treatments for serving; part of a cocktail, chilled, or as a mulled style warming winter drink.

Setting some of our award-winning Traditional Mead aside to age in Oak whiskey barrels has created a wondrously dark, deep, woody celebration of the best parts of oak and honey. This mead is layered with natural vanillins from the oak barrel with undertones of whiskey that used to call it home, beautifully balanced with our delicious late summer honey.

This is Stone Circle Mead Company's Fig mead. Full-bodied with an excellent finish.

Best served ambient as an aperitif or as an accompaniment to cheese.

We do love our foraging, even when it comes to the prickly gorse bush! Well worth the effort, though, as this one has turned out beautifully. It's a limited edition, being fermented in one of our smaller 'experimental' tanks, but this one is set to graduate to one of the larger tanks next year, even if it means doing battling with more gorse bushes in the Spring. Gentle honey flavour with a floral finish.
